DTZ Investors has agreed a leasing deal with chef Tomos Parry on a unit in Soho for his new concept restaurant Mountain.
Parry, who currently operates the one Michelin-starred Brat in Shoreditch and sister restaurant Climpson’s Arch in Hackney, has taken the former Byron Burger space at 16-18 Beak Street.
He will open Mountain, which takes inspiration from his Welsh heritage with a Spanish influence, later this year.
Adam Robinson, partner at Robinson Webster, who represented the landlord DTZ Investors, said: “Corner buildings always attract the best operators, which is why we have been able to secure one of the most talented, regarded, and exciting chefs in the UK. Mountain will be an amazing addition to the building and neighbourhood.”
Nick Weir, joint managing partner at Shelley Sandzer, who acted for the tenant, added: “The site Brian and his team have acquired is a great corner where Soho meets Carnaby, which required an operator to come up with a seriously compelling offer. That’s exactly what is being delivered from the team behind Brat. The former Byron on Beak Street offers Mountain the perfect platform to attract the huge concentration of office workers, tourists, and evening socialisers that visit Soho every day, and it’s a great coup for the area to add Tomos Parry to its immense line-up.”
